I thought this week I would shine a light on my nanna's anti-ageing chicken soup recipe (a family favourite)! Not only does it taste amazing but it is also perfect for the cooler months as it is filled with immune boosting nutrients to fight off those nasty bugs while also keeping you hydrated & looking beautiful!
Chicken itself is full of protein which helps to support the immune system & is also a good source of vitamins and minerals, such as B vitamins, which are known to boost immunity and help regulate digestion. If you suffer with digestive complaints, the bone broth (which is a part of this wonderful recipe) will help to sooth & heal the gastrointestinal tract.
The added oregano in this recipe is anti-bacterial, which can fight off infection & prevent possible stomach bugs. Ginger is a real superhero ingredient to warm you up from the inside out & sooth a sore throat or unsettled tummy. Both of these ingredients are loaded with antioxidants which prevent cell damage, vitamins & minerals to strengthen your immune system while supporting your skin from within & providing optimal winter wellness.
The added collagen powder will strengthen your hair & nails while also encouraging them to grow, it will fight fine lines & wrinkles to keep you looking young, reduce unwanted cellulite & sooth plus strengthen your GUT. It is super hydrating for the skin and will provide a more plump appearance.
This recipe is something you can enjoy once a week with the family! I also like to cook up a batch for lunches early in the week.
The secret recipe:
1x organic free range chicken (uncooked)
2x carrots (peeled & chopped)
4x celery stalks (leaves picked off & stalks chopped)
1x sweet potato (peeled & chopped into chucks)
6x large garlic cloves (grated or pressed)
1x large brown onion
1x big chunk of ginger (grated)
2x tablespoons of dried oregano
1x tablespoon of celtic sea salt
1x serving of Nutra Organic Unflavoured Collagen Powder (this product is available via Mungbean's online store).
In a large pot, place the chicken in and fill with enough filtered water to cover the chicken.
Add 1 tablespoon of salt into the water and bring it to the boil.
Turn the heat down to a simmer and add the diced onions, garlic, ginger and oregano to the water & cook for 45 minutes.
Take the pot off the heat, take the chicken out of the pot & set aside to cool for 10 minutes.
Pull the chicken apart into bite size pieces & place meat back into the pot (discard bones).
Add the sweet potato, carrots, celery & cook for another 25 minutes or until the potato is soft.
Remove from the heat & season with salt & pepper.
Add in the collagen powder & enjoy!
